Perfect Indian Chai

After spending 6 weeks in India on a physiotherapy placement, I fell in love with the Indian way of drinking Chai at every break in the day and after every meal. Shouts of “CHAI” “CHAI” at every trainstop, in every Indian home and during every working break fill the air followed by trays full of small metal cups filled with milky, spicy and oh-so-sweet chai.

Since I have been back, I have practiced and tried my best to find the perfect blend of spices, tea and sugar to make the most comparable chai to my favorite cup from Goa. Alas – let me share with you my blend. My version is quite a bit less sweet than the majority of Indian chai, however I did not short out on spices. I was very fortunate to be able to bring home some of the spices used and some fresh tea from India, however you can find any of the ingredients in your local grocery store.

What do you need to make Chai for 2 people?

– 2 cups of milk (I choose 1%, but the higher the percentage, the creamier it will be)

– 2 Tablespoons of black tea (I use a combination of cardamom and masala tea from India, any black tea will work however)

– 1/4 cup of brown sugar (can adjust to taste)

– 1/2 Teaspoon of whole cloves

– 1/2 Teaspoon of cinnamon, nutmeg and allspice combined

– 1 Teaspoon of fresh sliced ginger

– Star anise, if avaiable is also a really nice spice to add

Combine all the ingredients in a pot and heat over medium heat until steaming. Avoid boiling. Pour into a mug through a tea strainer and VOILA! Indian style chai!
